For when you can’t decided between tacos or pizza, but still want to stay pretty healthy: Taco-Pizza Eggplant Bites. Serving this with a side salad was a great way to round out dinner, or these would be great appetizers for pot-lucks or game day celebrations.

Ingredients
1 eggplant
1/2 package of Upton’s Seitan Chorizo
2 cups Mexican Cheese Blend
1/4 cup Goya Sofrito sauce
Himalayan Sea Salt
Olive oil
Directions
Preheat oven to 400 degrees
Peel Eggplant, cut into 1/4 inch rounds, and lay on paper towels. Sprinkle Himalayan sea salt and let sit for 15 minutes. Wipe moisture and excess salt off.
Brush eggplant on both sides with olive oil and bake for 15 minutes.
Flip eggplant and coat one side in Sofrito sauce. Sprinkle on Cheese and Chorizo.
Bake for 15 minutes.
